Recipe to take to a pig roast

John of By the Way is looking for recipes to replace the old standby GreenBean Casserole to take to a pig roast. My favorite is something I call Orange Fluff . Very simple to make. Another recipe that I like is Macaroni Salad.

Orange Fluff

1 package orange Jello

1 16oz. can crushed pineapple, drained

1 16oz can mandrain oranges, drained

1 large tub of CoolWhip, (I use the low-fat )

1 16oz of low-fat cottage cheese

Mix the CoolWhip and cottage cheese together. Stir in drained fruits. Then stir in dry Jello. Mix well. Refrigerate until ready to serve. Or not. I have mixed it at the picnic and served right away.

I never have leftovers.

Macaroni Salad

 macaroni, cooked and chilled ( I like to use the curly kind )

 Chop up the following. Use as much or as little of each that you prefer.

eggs, hardboiled- celery - green onions - tomatoes - red onion - carrots(can be shredded instead)

Mix all together. Add sweet pickle relish( a heaping tablespoon or 2) Pour Ranch dressing in and mix. Everything should stick together with a little bit extra for moisture. Best made day before but still good same day.

Guess what I will be making for Sunday!
